Spain is one of the oldest and leading producers of olives and olive oil in the world. Olive cultivation in Spain dates back at least to Roman times, but was greatly influenced by Arab domination, which introduced new irrigation techniques and varieties. Today, Spain is the largest producer of olive oil, with regions like Andalusia leading in production. The “Picual” variety is one of the most cultivated and valued.
